What do I need to know to be a catering waitress?

I remember applying for a job as a waitress at a catering banquet hall, Valentino's on the Green.. without thinking I went to fill out an application without any prior research of the job. They gave me a sort of assessment test, where they asked me questions about wines, liquors, different cooking styles, even about the man who the restaurant/banquet hall was named after, needless to say, I bombed the test, I think I only answered 3 questions and one of the answers was "I don't know"... I don't know if every catering hall I go to would give me a test like this but if so, are there any basics I would need to know ?
